For each egg:
- 1 medium tomato
- 1 spring onion
- One quarter-teaspoon of sesame oil
- One quarter-teaspoon of vinegar
- One quarter-teaspoon of salt or MSG
- One half teaspoon of sugar
- Half tablespoon oil
Prep
Mix egg with about half of the salt/MSG, sesame oil, vinegar, mix.
Cut tomato into 1/6th wedges, take out woody bit.
Finely chop spring onion
Cook
Wok on medium heat, to smoking point
Add oil
Add egg mix, scramble (30 secs to 10 minute).
Remove egg mix from wok
Turn wok to high.
Add another quarter tablespoon/egg of oil.
Add tomato and spring onion, cook for 1 minute
Add (extra) salt and sugar, stir.
Add eggs, cover and cook for a couple of minutes until the tomatoes are soft.
Notes: maybe add spring onion at the end instead?
